So, this last week we unknowingly had a pancake day!
Regular old pancakes for breakfast. I let Parker pick what color he wanted them to be... and I'm sure you can tell what he picked.
Then, for lunch, we had Tongan pancakes... I have no idea why they are called that. This is one of those meals you end up making when you're running low on groceries. It takes three ingredients: Top Ramen, eggs, and cheese. It's actually really yummy, but I won't pretend that it's healthy! You can dress it up with more stuff, like hot sauce or ham, but we keep it pretty simple here.
The basic directions (skip this paragraph if you couldn't care less): Stick one pack of Ramen in boiling water, but only let it get soft enough to unfold it... you don't want it to fall apart. Then take it out of the water and unfold it onto the frying pan. Pour a mixture of one egg and half a seasoning packet (from the Ramen) down the middle (lengthwise) and then keep the egg from running outside of the ramen. Flip over when cooked on one side, add cheese to one half and fold the other half on top!
